Colombia - Technical regulation on sanitary requirements for plants engaged in the slaughter of sheep and goats and importation and exportation of meat and edible meat products

Ministerio de Salud y Protección Social (Ministry of Health and Social Welfare) has issued draft technical regulation that establishes the sanitary requirements governing the operation of plants engaged in the slaughter of sheep and goats, and the cutting, storage, marketing, sale, transport, importation and exportation of meat and edible meat products.

It covers the following: Purpose; Scope; Definitions; Sanitary standards; Sanitation standard operating procedures (SSOPs); Ante- and post-mortem inspection; Hazard analysis and HACCP plan; Storage of meat and edible meat products; Inspection, monitoring, control, and penalty system; Notification; and Period of validity and derogations.
